1 cup yogurt
1 cup sugar
1/2 teaspoon baking soda
Oil for frying

Syrup

1 cup sugar
1/2 cup water
1 tablespoon rosewater (optional)
1 tablespoon lemon juice

  1. Prepare the Batter

    In a mixing bowl, combine the flour, yogurt, and baking soda. Whisk until you have a smooth batter. Let it rest for at least 1 hour.
  2. Make the Syrup

    In a saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves. Add lemon juice and rosewater, then let it simmer for about 10-15 minutes. Remove from heat and let it cool.
  3. Fry the Pastries

    Heat vegetable oil in a deep fryer or a deep pan to 350°F (175°C). Pour the batter into a piping bag. Squeeze small amounts of batter into the hot oil, creating small circular shapes for zoolbia and small lines for bamieh. Fry until golden brown.

    Once fried, immediately transfer the pastries into the cooled syrup. Let them soak for a few minutes, ensuring they are well-coated.
  5. Serve
