Ramadan Recipes: Stuffed Vine Leaves

Stuffed vine leaves are traditionally stuffed with rice and minced meat or rice and fresh herbs, and wrapped into little rolls. It is a delicious Mediterranean dish often served as part of a meze platter.

- 40 large vine leaves
- 250g short-grain rice
- 250g minced beef
- 2 medium finely chopped onions
- 500g chopped tomatoes
- 2 tsp tomato purée
- 3 tbsp finely chopped mint
- 2 tbsp lemon juice
- 140ml beef stock

- Prepare the vine leaves
تم نسخ الرابطWash the vine leaves, remove the stems, and blanch them in boiling water for 10 minutes, then let them drain and cool down completely.
- Prepare the filling
تم نسخ الرابطPut the olive oil in a saucepan over medium heat, add the onions and stir until it's translucent, then add the beef and cook for 5 more minutes, add tomatoes, purée, rice, mint, and lemon juice. Simmer for about 7 minutes, until almost all of the water is absorbed.
- Stuff and roll vine leaves
تم نسخ الرابطOpen up the leaf flat on a cutting board with the shiny side down and add a teaspoon of stuffing at the bottom end, fold it over the filling, bring both sides in toward the middle and tightly roll the leaves up.
- Finish the dish and cook
تم نسخ الرابطPlace the rolled vine leaves into a cooking pot, with sliced tomatoes placed at the bottom. Pour over the stock, cover the pan, and leave it until the rice is fully cooked.
