Spanakopita

6 sheets of filo pastry
80 g feta cheese
500 g spinach
80 g onion (finely chopped)
6 cloves (finely chopped)
30 ml oil
Salt and pepper to taste
  • Method & Directions

  1. Preparing the Oven

    Preheat the oven to 200 degrees Celsius.
  2. Blanching and Chopping Spinach

    Blanch the spinach by heating up a pot with boiling water. Squeeze all the water out of the spinach and then finely chop it.
  3. Cooking the Spinach Mixture

    Heat up a pan with some oil and start to cook the onions. When translucent, add the garlic. Once fragrant, add in the spinach and cook till all the water evaporates. Transfer to a plate and let cool completely.
  4. Mixing the Cheese Filling

    In a mixing bowl, combine the feta, ricotta, and spinach mixture. Season with salt and pepper.
  5. Preparing the Filo Pastry Sheets

    Lay out one sheet of filo pastry on a flat surface. Brush with butter and lay out another one on top. Divide and cut them into even strips (8 cm wide).
  6. Assembling the Spanakopita Triangles

    Spoon out a tablespoon of the cheese filling into a corner and fold it into triangles. Brush with butter.
  7. Baking the Spanakopita

    Bake in the oven for 10-15 minutes till light golden.
