Lamb Harees

1 cup cracked wheat
1 cup whole wheat
1 kg lamb, bone-in, cut into chunks
2 large onions, finely chopped
4 cloves garlic, minced
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
Salt to taste

  1. Soak the Wheat

    Wash the cracked wheat and whole wheat, then soak them in water for a few hours or overnight.
  2. Prepare the Lamb

    In a large pot, combine the soaked wheat, chunks of lamb, chopped onions, minced garlic, ground cinnamon, ground cardamom, and salt.
  3. Cooking Phase 1

    Bring the mixture to a boil, then reduce the heat to low and let it simmer. Stir occasionally to prevent sticking. This initial cooking phase takes around 1-2 hours.
  4. Mashing

    After the wheat and lamb have softened, use a traditional harees stick or an immersion blender to mash the mixture until it reaches a porridge-like consistency.
  5. Cooking Phase 2

    Return the pot to the heat and continue cooking on low, stirring frequently. Add ghee or clarified butter for richness. Cook until the harees reaches a smooth and creamy texture. This phase takes an additional 1-2 hours.
  6. Serve
