Ramadan Recipes: Himbasha

Himbasha is an Ethiopian flatbread that is mildly sweet and flavored with cardamom, raisin, and black sesame seeds. It is often made as a celebratory bread.

- 3 tbsp sugar
- 1 tsp instant yeast
- ½ tsp salt
- Olive oil (2 tbsp plus 2 tsp to grease)
- ½ cup to ¾ cup warm water
- ¼ cup raisin
- 1 tsp black sesame seeds
- ½ tsp cardamom powder
- 3 tbsp milk (for brushing on top)

- Mix the dry ingredients

- Add the liquid ingredients

- Knead the dough

- Place the dough in a pan

- Bake the Himbasha
