Chicken Estofado With Bananas

3 tablespoons Oil
3 pieces green bananas sliced
1 Small carrots sliced
1 medium potato sliced
1 medium red onion chopped
4 cloves Garlic chopped
1 kilogram Chicken cut into serving pieces
4 tablespoons Soy Sauce
1 Cup water
2 tablespoons Vinegar
1 Cup Tomato sauce
2 tablespoons brown sugar or muscovado sugar
Salt to taste

    Heat oil in a medium pan over medium heat. Fry the banana, carrots, and potato for 3 to 5 minutes. Remove from heat and drain on paper towels.
