For the Fillings

3 tbsp olive oil
1¼kg beef mince
2 onions, finely chopped
3 carrots, chopped
3 celery sticks, chopped
2 garlic cloves, finely chopped
3 tbsp plain flour
1 tbsp tomato purée
large glass of red wine (optional)
850ml beef stock
4 tbsp Worcestershire sauce
a few thyme sprigs
2 bay leaves

For the Mash

1.8kg potatoes, chopped
225ml milk
25g butter
200g strong cheddar, grated
freshly grated nutmeg

  1. Browning the Beef

    Heat 1 tbsp olive oil in a large saucepan and brown 1¼kg beef mince until golden, setting it aside as it browns.
  2. Sautéing Vegetables

    In the same pan, add 2 tbsp olive oil, and cook 2 finely chopped onions, 3 chopped carrots, and 3 chopped celery sticks on a gentle heat until soft for about 20 mins.
  3. Flavorful Base

    Introduce 2 finely chopped garlic cloves, 3 tbsp plain flour, and 1 tbsp tomato purée. Increase heat, cook for a few mins, then return the browned beef to the pan.
  4. Creating the Gravy

    Pour in a large glass of red wine (optional), boil to reduce slightly, and add 850ml beef stock, 4 tbsp Worcestershire sauce, thyme sprigs, and 2 bay leaves.
  5. Simmering and Seasoning

    Bring to a simmer, cook uncovered for 45 mins until the gravy thickens, and season well. Remove bay leaves and thyme stalks.
  6. Making the Mash

    In a separate saucepan, boil 1.8kg peeled and chopped potatoes in salted water. Drain and steam-dry, then mash with 225ml milk, 25g butter, three-quarters of 200g strong cheddar cheese, and season with nutmeg, salt, and pepper.
  7. Assembling the Pie

    Spoon the meat into 2 ovenproof dishes, top with mashed potatoes, and sprinkle with the remaining cheese.
  8. Baking the Pie

    For immediate consumption, preheat the oven to 220C/200C fan/gas 7, and bake for 25-30 mins until the topping is golden.
  9. Slow Cooker Option

    Brown the mince, transfer to the slow cooker, add vegetables, flour, purée, wine, stock, Worcestershire sauce, and herbs. Cook on High for 4-5 hours. Make mash separately and finish by oven cooking as described in Step 9.
