Lemon Herb Chicken

4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 lemon, juiced and zested
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and black pepper to taste

Roasted Vegetables

2 cups baby potatoes, halved
1 cup baby carrots
1 cup cherry tomatoes
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and black pepper to taste

  1. Marinate the Chicken

    In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, dried thyme, dried rosemary, salt, and black pepper. Place chicken breasts in a zip-top bag, pour the marinade over them, seal the bag, and refrigerate for at least 1 hour.
  2. Preheat the Oven

  3. Prepare Roasted Vegetables
