Healthy Veggie Pie

1 potato (150 grams), shredded
2 eggs
½ carrot, shredded
2 tbsp parsley, chopped
1 hot green pepper, chopped
½ tsp black pepper
1 tsp salt
½ tsp cumin
1 tsp thyme
½ tsp dried chili flakes
2 tbsp mozzarella cheese

  1. Prepare the Batter

    First, grate your potatoes and carrots and place in a mixing bowl. Crack your eggs and add the parsley and hot peppers along with the black pepper, salt, cumin, thyme, and dried chili flakes.
  2. Prepare to Bake

    Layer a baking dish with parchment paper and pour the batter in it. Top with sliced hot green pepper and mozzarella cheese.
  3. Bake

    You can either bake this in an Air Fryer for 10 minutes at 190 degrees or bake in an oven for 15 minutes at 180 degrees. Enjoy!
