Coconut Pudding

2 cups milk
1 ½ cups shredded coconut
1 tsp vanilla powder (or vanilla extract)
2 tbsp sugar (adjust to taste)
2 tbsp cornstarch
1 tbsp butter

Chocolate Topping

1 cup heavy cream
200 grams dark chocolate
Shredded coconut to garnish

  1. Prepare the Coconut Pudding

    In a large pot, mix cold or room-temperature milk, shredded coconut, vanilla powder, sugar, and cornstarch. Mix well while cold then transfer to medium heat and keep mixing.
  2. Add the Butter

    Before the pudding starts bubbling, add the butter and mix well. Once you get a thick pudding consistency, turn off the heat and pour it into a serving dish. Set it aside and allow it to cool down fully.
  3. Prepare the Chocolate Sauce

    Toss heavy cream with dark chocolate in a saucepan, then transfer to low heat. Keep stirring until the chocolate melts and you get a thick chocolate sauce.
  4. Assemble

    Now, pour the chocolate sauce over the coconut layer. Let it cool down then refrigerate for 1 hour or more.
  5. Serve

    Before serving, top the chocolate layer with more shredded coconut, and enjoy!
