Chocolate Chia Pudding

1 ½ tbsp chia seeds
1 date, pitted
1 tbsp unsweetened cocoa powder
1 tsp instant coffee
1 tsp vanilla extract
1 tsp cinnamon powder
8 tbsp hot water
Melted dark chocolate to garnish

  1. Mix the Pudding

    Start by combining chia seeds, dates, unsweetened cocoa powder, instant coffee, vanilla extract, and cinnamon powder in a bowl.
  2. Add the Water

    Start by adding 8 tablespoons of hot water, and mix using a hand blender. Gradually add more water if needed until you get a thick pudding consistency.
  3. Top with Dark Chocolate

    Pour the pudding into serving dishes, and top with melted dark chocolate.
  4. Let it Set

    Chia seeds need to soak in the mixture for at least 30 minutes before eating. The longer you wait the better. So, refrigerate for as long as you want and enjoy!
