In his new position, the Italian plans to elevate the gastronomic experiences of both outlets, looking to position them as each emirate’s quintessential beach club.
Born in Rome, Napoleon completed a degree in Culinary Science and Kitchen Management, before moving to France as a chef de partie within Hilton Evian-les-Bains. From there he became chef de partie at The Waldorf Hilton in London and later the NH Collection Grand Hotel Krasnapolsky in Sicily.
He then moved to Gibraltar as the jr. sous chef of Sunborn Gibraltar Hotel before returning to London to work at the InterContinental London – The Q2. By 2017, he had made his debut in the UAE, working at the DoubleTree by Hilton on Al Marjan Island before joining the Cavalli Club in Dubai.
It was here, as executive chef, he became the first chef in the world to be distinguished with a ‘Gastromoon’, an international award for restaurants, as well as become registered as a member of the World Chefs Association.
